Turkey Chili

Introduction

Number of Servings: 6

Ingredients

    1 Tbsp Olive Oil
    500 g Extra Lean Ground Turkey (or 1 pkg of Kirkland/Costco)
    1 onion chopped
    2 cups canned red kidney beans (or 1 540ml/19 fl oz can), drained
    3 cups diced canned tomatoes (or 1 can 796ml/28 fl oz can)
    2 tsp chili powder
    1 tbsp garlic powder
    1 tsp black pepper
    1 tsp crushed red pepper flakes
    - low sodium chicken stock (optional)

Directions

1. In a large pan, heat olive oil and add ground turkey. Cook until brown, stirring frequently (about 5 minutes).
2. Add the onion. Saute until the onion starts to soften.
3. Add the kidney beans and spices. Stir.
4. Add the can of diced tomatoes.
5. Add some low sodium chicken stock if you prefer a soupier chili. (Low sodium chicken stock is not included in the nutritional counter.)
6. Stir well and cover, simmering on low heat for 20 - 30 minutes to allow flavors to blend.

For a milder version, reduce the amount of chili and red pepper flakes. For a hotter version, add more. Not sure how much heat to add? Try putting less in the pot and allow diners to add their own at the table - it is an easier way to accomodate all heat preferences! :)

Makes about 6 servings, approximately 1 cup each.

Serve with a salad and a low calorie bread option.
