Goat Cheese Dressing

Introduction

This recipe is really flexible, so feel free to mix a small amount and play with it before you make up a larger batch. Really classy, and great with red leaf (or other bitter letuce), croutons, and some shredded paremesan! Ingredients

    1oz Garlic and Herb goat cheese
    2 tbsp Low fat yogurt
    1 tbsp milk
    1 tsp parsley or herbs of choice

Directions

Mash goat cheese with yogurt first, then slowly add milk to desired consistency. Blend in herbs, chill, and serve. I personally like to reserve some of the cheese and stir little chunks in, and garnish with fresh parsley. Great on salad, with tomatoes, and a great spread if you add a little less milk.

Makes 1/4cup, or 4 1tbsp servings.
