Fava Beans - Stewed

Ingredients

    8 cups Beans, fava cooked
    1 cup Lentils, dry
    1 Tbsp Extra Virgin Olive Oil
    1 Lemon, Juice squeezed
    .5 tsp Cumin Powder
    .5 tsp Corriander
    .5 tsp sea salt
    .25 black Pepper

Directions

Soak beans overnight or longer until they start to regain their shape. Rinse the lentils well in a sieve. Cook both in a slow cooker with one cup red lentils until tender with 3 cups of water per cup of dry beans (sorry about the measurement of cooked fava beans, I only measured them after I cooked them, so dry is probably less than 8 cups). Season what you need now and freeze remaining bean mix for later use.

Combine fava beans and all ingredients. If serving for breakfast mash in a hard boiled egg (very good), for lunch chop in tomato and a bit of onion, make into a pita sandwich or maybe a wrap. Can also mash in Feta cheese.

This mix makes 6.5 one cup servings, 13 half cup servings or for what I need, 26.25 quarter cup servings which I find suitable (only 47 calories and 3.7 g protein) when adding other ingredients as suggested.
