Oriental Noodles with a KICK!

Introduction

As tasty as store bought, but low salt, no fat, and as kicky as you like! Add a tablespoon of peanut butter and 1/2 cup boiling water while simmering for instant satay noodles! Ingredients

    100g dry oriental noodles
    200g shrimps
    1/2 cup frozen corn
    100g sliced zucchini
    1 small onion, finely chopped
    1 large carrot, shredded
    1 tsp chopped garlic
    1 tsp chopped ginger root
    1 tsp chopped hot chilis
    1 tbsp soy sauce
    2 peeled oranges

Directions

Blend together whole oranges (minus peel of course), garlic, ginger, soy sauce and chilis. Set aside. Boil noodles until cooked. Drain and set aside. Spray a skillet/wok with non-stick spray. Throw in onion, shrimp and corn and heat through. Add zucchini and cook through. Add blended sauce and bring to boil. Allow to simmer through for about 2 minutes (to infuse flavours). Turn off heat. Mix in noodles and shredded carrot until well covered in sauce. Serve immediately.
