1 medium zucchini chopped into chunks
1 small summer squash chopped into chunks
1 medium red potato chopped into very small chunks
1/2 medium yellow onion chopped
3+ cloves garlic chopped
5-6 mushrooms chopped/sliced
3oz lean ground beef
1 cup bottled pasta sauce
herbs to taste (I used rosemary, basil, thyme, and sage)
mozzarella shredded on top (approx. 1/5 oz)
Cook ground beef until fully cooked.
Cook spaghetti sauce with herbs, ground beef and onions, garlic, and mushrooms until flavors are blended.
Pile chopped zucchini, squash and potato into a 9x9 baking pan, pour sauce over, and top with grated mozzarella.
Bake at 350 until all the veggies are cooked through - approx 45min.
