Vegetable Pasta Salad

Introduction

Number of Servings: 50

Ingredients

    1# pasta,cooked, rinsed and cooled
    1 head cauliflower, in small pieces
    1 bunch of broccoli, in small pieces
    2 scallions, chopped (or 1 small onion)
    2 peppers,chopped (I like to use 1/2 of green, red, yellow & orange for color)
    2 cucumbers,chopped

    Dressing:
    1 1/2 c vegetable oil
    1 1/2 c sugar
    1 1/2 c cider vinegar
    1 TBS garlic powder
    1 TBS salt
    1 TBS Accent
    1 TBS parsley
    1 tsp black pepper


Directions

Mix dressing ingredients together and pour over vegetables and pasta mixture. Let sit in refrigerator for several hours or overnight for flavors to blend.

For added flavor sometimes I add fancy shredded mozzarella and chopped bacon (not included in the nutrition totals)
