Introduction

My kids thought they were eating mashed potatoes! These are really a great way to get everyone to "eat their veggies"! My kids thought they were eating mashed potatoes! These are really a great way to get everyone to "eat their veggies"!
Number of Servings: 4

Ingredients

    1 medium head cauliflower
    1 tbsp cream cheese, softened
    1/4 c grated Parmesan cheese
    2 cloves garlic, minced
    2 tbsp chicken broth
    1/2 tsp salt
    1/2 tsp pepper
    1 tsp chives
    1/2 tsp rosemary
    2 tbsp unsalted butter

Directions

Steam cauliflower in steamer basket for 8 minutes, or until well done. Pat cooked, hot cauliflower very dry between several layers of paper towels.

Puree the hot cauliflower with all other ingredients in food processer.

(Can roast the garlic before adding into food processor for a delicious addition.)
