Taste of Homes BBQ Pork and Penne Skillet

Ingredients

    1 package of penne pasta
    1 C chopped red pepper
    3/4 C chopped onion
    1 Tbsp Margarine
    1 Tbsp Olive Oil
    3 garlic cloves minced
    18 oz of shredded pork
    1 Can diced tomatoes
    1/2 C beef broth
    1 tsp ground cumin
    1 tsp pepper
    1 tsp salt
    1 1/4 C LF Cheddar Cheese

Directions

1. Cook pasta according to package directions. Meanwhile, in a large skillet, saute red pepper and onion in margarine and oil until tender. Add garlic; saute 1 minute longer. Stir in the pork, tomatoes, broth, cumin, pepper, and salt; heat through.

2. Drain pasta. Add pasta and cheese to pork mixture.

3. Serve desired amount of pasta. Cool remaining pasta; transfer to freezer containers. Cover and freeze for up to 3 months.

To Use Frozen Pasta:
Thaw in the refrigerator. Place in an ungreased, shallow, microwave-safe dish. Cover and microwave on high until heated through.
