Jean's Shrimp Stew

Introduction

Number of Servings: 8

Ingredients

    1 lb Zucchini
    1 lb Yellow summer squash
    1 bunch green onions with tops
    1-2 Cloves garlic, if desired
    2 Tsp Olive Oil
    1 14 oz can chicken broth
    1 10-oz can tomatoes with green chilies
    1 Tbsp Old Bay Seafood Seasoning
    1 lb Raw shrimp, peeled and deveined
    Cooked Rice

Directions

Wash squash and zucchini and slice into rounds about 1/2 inch thick. Slive onions and chop garlic, then saute garlic and onions in smal amount of oil until just beginning to turn brown. Add remaining ingredients, except shrimp. Bring to a boil, reduce heat and simmer about 20 minutes. Add shrimp; simmer until shrimp is cooked through, about 5-10 minutes. If desired, serve over rice.

Serving Size: Makes 8 1-cup servings
