Spanish Omelette with bacon

Introduction

A nice light meal to be enjoyed with a salad, or cold as a picnic food.
I don't prepare it completely traditionally, I use less oil and I don't try to flip it, instead I grill it.

Number of Servings: 8

Ingredients

    3 tbs oil
    1 medium onion, sliced
    3 medium potatoes (boiled and sliced)
    250g lean diced bacon
    5 large eggs
    Salt and Pepper

Directions

1. Boil potatoes with skins on, until tender but not mushy. Slice thinly.
2. In a large saucepan, heat the oil and gently saute onions until soft, then add potatoes and saute for five minutes and transfer to large bowl. Fry bacon in the saucepan, and then add to potato/onions.
3. In a separate bowl whisk the eggs and add to potato mix, gently mix, then season well.
4. Take a large non stick (oven proof) frying pan and spray with non stick spray and heat to high. Pour egg potatoes into pan and spread it out evenly and immediately reduce to medium heat. Cook until it is set around the sides, shake it regularly. Then put under the oven grill until it sets on top.

Cut into 8 wedges. 1 serving = 1 wedge

Serving Size: Makes 8 servings - 1/8th wedge
