Spanish Rice My Spanish Rice MyNumber of Servings: 10
Ingredients

2 cups long grain rice
10 oz chicken broth
10oz water
1 med onion diced
1/4 c diced red pepper
2 small tomatoes diced
2 cloves garlic minced
1 tsp oregano
1/4 tsp salt
Directions
Saute uncooked rice in oil for 5 minutes stirring. This brings out a nutty flavour in the finished dish. Add garlic, onions and peppers-continue to saute until soft.
Add rice mixture, tomatoes, oregano, salt , broth and water to rice cooker or pan with lid. Cover and cook approx 20 minutes. Serve warm. Can store and reheat the next day.
