IntroductionI remember a recipe like this from a restaurant I used to work for. I remember a recipe like this from a restaurant I used to work for.
1 Tbsp Olive Oil
1/2 Cup Celery chopped
1/2 Cup Onion Chopped
2 cups chicken broth
5 small Summer Squash cut into cubes or slices(about 4 cups)
1/2 cup bread crumbs
10 saltine crackers crushed
2 oz parmesean cheese grated
Mash squash mixture (like mashed potatoes) then add bread crumbs and saltines. Sitr until well blended then stir in about half the gratted cheese. Place in casserole dish (you can spray with cooking spray if desired) and bake at 350° for about 25 minutes. Top with gratted cheese and melt for last 5 minutes of baking. Serve hot.
