Introduction

This is an easy one pot work night supper. It is also a good way to stretch 1 lb of ground beef and use up leftovers. This is an easy one pot work night supper. It is also a good way to stretch 1 lb of ground beef and use up leftovers.
Number of Servings: 6

Ingredients

    1 lb lean ground beef
    1 1/2 cups cooked rice
    1 cup canned black beans (rinsed)
    1 cup corn
    1/4 cup chopped onion
    12 grape tomatoes, cut in half
    1 can (8 oz) tomato sauce
    2 TBS chili powder
    1/2 tsp garlic powder
    1/2 tsp fresh ground pepper

Directions

Brown ground beef and onion in large skillet; drain off fat. Add remaining ingredients except grape tomatoes and stir well. Cook over med heat until bubbling and heated through, about 15 minutes. Add grape tomatoes and cook 5 min more.
