Cabbage Mushroom soup

Introduction

soup base, beef broth, cabbage and mushrooms. YUM! soup base, beef broth, cabbage and mushrooms. YUM!

Ingredients

    6 cups beef stock (low sodium)
    2 cups baby portabella mushrooms, thick slices
    1 cup celery
    1 medium onion
    2 cups green cabbage
    olive oil

Directions

sautee onion and celery in 1tbs olive oil
slice cabbage in long shreds, like noodles
sautee with onion and celery for 1-2 minutes. Splash a little soy onto the cabbage.
add low sodium beef broth.
add mushrooms
boil, reduce to simmer for 15 minutes, or until mushrooms are desired consistency.

Serving Size: makes 3 large (2 cup) servings
