Ingredients

    3 pounds summer squash (zucchini, yellow, etc), about 7 or 8
    2 onions
    12 ounces fat free sour cream
    stuffing mix – 6-7 ounce box
    2 cups sharp cheddar cheese
    1 cup liquid from boiling squash
    1 tsp Toni Catcher’s seasoning
    Cream of chicken soup – reduced calories

Directions

Cut squash into half inch cubes or rounds. Chop onions. Cover and boil along with Toni Catcher’s or salt and pepper to taste until soft.

Drain, reserving 1 cup of liquid. Add all other ingredients along with liquid and squash. Cook in 13x9 at 350 for 45 minutes.
