Number of Servings: 6

Ingredients

    1 tbsp extra virgin olive oil
    1 med. onion, diced
    1 red bell pepper, diced
    3 cloves of garlic, diced
    2 tbsp tomato paste
    1 tsp salt
    1/4 tsp Cayenne pepper
    1/2 tsp ground cumin
    1 tbsp paprika
    1/4 tsp black pepper
    1 lb. smoked sausage, thinly sliced
    1/2 tsp marjoram
    2 cups long-grain brown rice, rinsed
    2 cups beef stock

Directions

Pour the oil into the pressure cooker and let it preheat with the lid off.
Add the onions to the pressure cooker and cook for 2 minutes, stirring occasionally.
Add the red peppers and garlic to the pressure cooker; stir.
Add the tomato paste to the pressure cooker and cook for an additional 2 minutes.
Add remaining ingredients to the pressure cooker; secure lid.
Set pressure cooker to RICE and timer to 6 minutes.
When cooking is complete, stir and serve immediately.

Serving Size: makes 6 1-cup servings
