Whole Wheat Pizza Dough

This is a Sicilian style dough with a nice chewy texture. Omit the olive oil and increase the water to 1 cup if you want a more traditional pizzeria crust. Ingredients

4 cups flour, divided
2 tsp. instant yeast [2 pkgs]
1/4 tsp salt
1/4 cup olive oil [reserve a teaspoon to oil the bowl]
3/4 cup very lukewarm water [about 120F]
Directions
Place 2 cups of flour, the yeast and salt into a large bowl.
Add the olive oil and water. Mix the ingredients together, adding flour as needed to form a stiff dough. Knead until the dough is smooth and elastic.
Spray or oil the bowl and replace the dough, turning it to coat with the oil.
Cover with plastic wrap and a clean towel and let rise until doubled, about 1 hour
Preheat oven to 500F. [it usually takes about 15 minutes]
Remove from bowl and divide in two. Roll or toss until the dough is the thickness you want.
Place on a pan or stone. Load with you favourite toppings.
Bake for 5 minutes for thin crust and a plain cheesy pizza... the time can increase to 10 minutes if the pizza is heavily loaded...watch the cheese for browning.
Remove and let sit for 5 minutes before cutting
