Chickpea & Tuna Salad

Introduction

Deliciously protein packed salad. Beautiful colors and scrumptious taste. This salad can easily be modified to fit what you have on hand. I only had chickpeas but you can easily use other beans. Makes 16 servings (calculated as a side dish). Deliciously protein packed salad. Beautiful colors and scrumptious taste. This salad can easily be modified to fit what you have on hand. Ingredients

    2 cans (230g drained each) chickpeas
    2 cans of tuna in water (drained)
    2 small tomatoes
    1 small cucumber
    1 red or orange pepper
    1 avocado
    1 red onion
    1 small can (130g drained) sweet yellow corn
    1/2 cup of Italian Salad Dressing (Light)

Directions

Dice up all the vegetables, except for the corn. I scooped out the seed part of the cucumber to make the salad less runny. Combine all the ingredients and mix well. Add salt & pepper to taste (optional).

Enjoy!
