Split Pea Soup

Introduction

Just like the yummy Dutch lunches in Holland, MI, during Tulip Time! Just like the yummy Dutch lunches in Holland, MI, during Tulip Time!
Number of Servings: 8

Ingredients

    8 cups water
    1 pound dried split peas (about 21/4 cups)
    7 slices Farmland 96% fat free Ham, diced
    1 medium onion, chopped (about 1/2 cup)
    1 tsp salt
    1/4 tsp pepper
    2 medium carrots, cut into 1/2 inch pieces
    2 medium stalks celery, cut into 1/2 inch pieces

Directions

Heat water and peas to boliling in Dutch oven; boil 2 min. Remove from heat; cover and let stand 1 hour.

Stir ham, onion, salt and pepper into peas. Het to boiling, reduce heat. Cover and simmer until peas are tender, about 1 hour.

Stir carrots and celery into soup. Het to boiling; reduce heat. Cover and simmer until vegetables are tender, about 45 min. 8 servings (about 1/2 cups each).
