Healthier Shepherd's Pie

Ingredients

2.5oz cooked lean ground beef and turkey
1/2c cooked black forbidden rice (or other rice)
3/4c cooked French lentils
2T finely shredded 2% cheese
3 1/2c organic frozen mixed veggies
3 small potatoes, skin on, microwaved until soft, mashed
1c dehydrated potato flakes
1 1/3c low sodium low fat organic chicken broth
1c water + more if needed
liberal sprinkling of AlsoSalt and fresh ground pepper
Directions
Preheat oven to 375degrees F.
Layer the first 5 ingredients in the order listed in a glass casserole dish.
In a medium bowl, combine potato flakes, water, and broth, and microwave for 2 1/2 minutes. Stir in 3 small microwaved smashed potatoes. Add water if needed to thin it a bit. Add pepper and AlsoSalt. Mix well. Layer on top of meat, rice, lentils, cheese and veggies in casserole dish.
Slide into hot oven and bake for 50-60 mins, until veggies are cooked through and everything is hot.
Add extra spices at table if desired.
