Jiffy Tuna "Pie"

Introduction

Ingredients

    5 ounces canned tuna packed in water, drained
    1.5 ounces fresh mushrooms, very coarsely chopped
    5 ounces broccoli florets
    1 green onion, chopped
    3/4 cup cheddar cheese (or a mixture of your favorites)

    1 egg
    1 1/2 tablespoons egg white
    1/2 cup 1% milk
    1/2 cup Jiffy all-purpose baking mix
    1/8 teaspoon pepper
    1/4 teaspoon Mrs Dash Garlic & Herb seasoning blend


Directions

SPRAY a small (1-1 1/2 qt) casserole with cooking spray and preheat the oven to 400.


COMBINE the tuna, mushrooms, broccoli, green onion and the cheese together and pour into the casserole dish.


IN a separate bowl combine the remaining ingredients and whisk to combine.


POUR the egg mixture over the tuna mixture and bake for 2-30 minutes until the surface is golden brown.

Serving Size: Makes 3 1 1/2-2 cup servings
