Amazey Chicken Caprese with Spinach and Mushrooms

Introduction

This was something I threw together with what I had on hand. It turned out incredibly well, so I thought I'd share! This does make a larger, very hearty meal, so make sure you're hungry.

This recipe can easily be multiplied to fit the needs of a whole family, and you can take or leave ingredients you don't care for.

This recipe can easily be multiplied to fit the needs of a whole family, and you can take or leave ingredients you don't care for.

Number of Servings: 1

Ingredients

    1 tbsp olive oil
    1 cup fresh spinach, cut in strips
    1 plum or Roma tomato, sliced
    1 cup mushrooms, canned or fresh
    1 garlic clove, minced
    6 oz. boneless, skinless chicken breast, pre-cooked
    1 wedge Laughing Cow cheese in your favorite flavor (I have used both Sun Dried Tomato and Garlic and Herb, with equally tasty results)
    dried basil, salt and pepper to taste

Directions

Heat olive oil with basil, salt and pepper, just until warm.

Add all vegetables and sautee until soft. Add chicken and saute for about 5 minutes. Add the cheese last, and continue to saute until cheese is melted.

That's it! Easy Caprese! Enjoy!

Serving Size: makes 1 large portion, or 2 smaller servings
