Sweet Dough Cinnamon Pecan Rolls

Introduction

Number of Servings: 36

Ingredients

    1 cup milk scalded
    1/2 cup sugar
    3 large eggs
    1/3 cup melted butter
    2 packages fleishman's yeast
    1/2 cup water
    7 cups white flour (add more as needed)

    for filling
    3/4 cup Butter
    11/2 cup brown sugar
    6 TBS Cinnamon
    1 cup chopped Pecans

Directions

Scald Milk and let cool. Proof yeast in 1/2 cup warm water. Beat eggs, butter sugar and 1/2 cup water. Add cooled milk. Add flour and knead until soft, but no longer sticks to your hands. Is a very tender, soft feeling, silky, dough when the texture is right. Cover and let rise. Punch down, and let rise again. Can even do this once more if you have lots of time.
Divide dough into 3 sections. Working with one section at a time, roll out to 12 by 16 inches. Leave 1 inch edge empty on one of the 16 inch sides. Spread dough with 1/3 of the butter, and sprinkle on 1/2 cup brown sugar, 2 TBS ground cinnamon, 1/3 cup chopped pecans. Roll up leaving the unfilled edge as the closing edge to make sealing easier. Pinch this edge together. Cut into twelve pieces. Place in greased muffin tins or greased pan. Let rise in a warm place until doubled.
Bake at 350 degree oven for about 20 minutes. Remove from pan while still warm or you will be in trouble.
