Crockpot Hamburger Soup

Ingredients

    1lb lean ground beef
    1/2 cup onion, chopped
    1/2 cup celery, chopped
    2 cups carrots, sliced
    1 cup corn
    1 cup peas, frozen
    14oz tomatoes
    1/2 cup barley
    4 cups water
    2 bouillon cubes
    1 tbsp salt
    1/2 tsp pepper
    156 ml tomato paste

Directions

Brown meat and onions in frying pan. Transfer to crockpot and add vegetables and remaining ingredients. Mix together and cook on high for 6 hours. Freezes well.

Makes 12 1-cup servings.

  • I used ground turkey and it came out a little bland so I added crushed red pepper, oregano, chili powder, cumin and ground mustard which added tons of flavor and it ended up a winner! - 1/23/10
