Chicken Tortilla Soup

Introduction

You may serve with deep fried corn tortillas, sour cream, cheese, etc, but note that none of those items are included in the nutritional information. I like this soup just the way it is on a cold night! Love it!!
It is very high in sodium but there are ways to cut that if you prefer. This is just the quick and easy version for a weekday night. You can cook your own black beans or eliminate them all together. Choose no salt ingredients, etc...

Ingredients

    3 Tbs. Vegetable Oil
    8 Corn Tortilla, chopped
    4-6 cloves garlic, minced
    1/2 c. Cilantro
    1 Onion, chopped
    2 cans Hunt's Fire Roasted diced tomatoes
    2 Tbs. Cumin
    1 Tbs. Chili Powder
    3 Bay Leaf
    4 c. low sodium Chicken broth
    2 c. Water
    1/2 tsp. salt
    1/2 tsp. Cayenne pepper
    I can Bush's Black Beans, rinsed and drained
    1 1/2 c. Frozen corn
    2 chicken breasts, already cooked and chopped


Directions

Heat oil in a large pot or dutch oven. Saute corn tortillas, garlic and onion for 2-3 minutes or until onion begins to soften. Add tomatoes, cumin, chili powder, bay leaves, broth, salt and cayenne. Bring to a boil. Reduce heat and allow to simmer for 30 minutes. Add beans, corn and diced chicken and heat thoroughly.

Makes about 10 cups (1 cup is 1 serving)
