Red Curry Chickpeas & Tofu and Rice

Introduction

Delicious Curry Chickpeas that will make you wanna slap your mama. Well maybe not, but they are really good. I got the recipe from a Trindadian Friend. Ingredients may be a bit off. He did not really use measurements. I will try making the recipe myself and will update the quantities. Delicious Curry Chickpeas that will make you wanna slap your mama. Number of Servings: 24

Ingredients

    1cup Curry powder
    2 Tbsp Salt, 1 tbsp
    1/2 cup Canola Oil
    4 cloves Garlic
    1/2 Onions, raw chopped
    1/2 cup Tomato Paste
    1 cup Coconut Milk
    1 pound dry Chickpeas (garbanzo beans)
    1 Block Tofu, extra firm
    1 Tbsp Granulated Sugar
    Cooked White Rice, long grain

Directions

Cook chickpeas until soft
In a skillet, Heat Oil.
Add Onions and Garlic til tender.
Add Curry Powder, Salt, Tomato Paste, Sugar, and Coconut Milk.
Drain 2 cans of chickpeas. Add to pot. Add remaining can of chickpeas with liquid.
Add Tofu.
Bring to a boil stirring often.
Simmer for 15-20min.
