Noodleless Lasagna (Ellen's), Low Carb

Ingredients

    1 lb. ground beef
    1 clove garlic
    1 large red or green bell pepper
    1 small onion
    1 cup low-carb no sugar added spaghetti sauce (Hunt's)
    1 can (4 ounces) sliced mushrooms (or 1/2 of an 8 oz package fresh mushrooms)
    1 cup part skim ricotta cheese
    1 egg, beaten
    1 1/2 cups shredded mozzarella cheese
    1/2 tablespoon Italian seasoning
    1/2 tsp nutmeg, ground
    1/2 tsp Italian Seasoning
    18 slices Pepperoni (1-3/8" dia x 1/8" thick)

Directions

1. Preheat the oven to 350F. Grease an 8 x 8-inch glass baking dish with nonstick cooking spray.

2. Brown the ground beef in a large frying pan. Drain off the excess oil. Remove beef from pan.

3. Add garlic, pepper & onion to pan & saute until onion is transparent.

4. Add beef, spaghetti sauce & mushrooms, & simmer for 10 minutes.

5. Meanwhile, in a small bowl, mix the ricotta, egg, 1/4 cup mozzarella, nutmeg & Italian seasoning. Beat well with a fork.

6. Spread the beef mixture in the bottom of the dish. Spread the ricotta mixture on top of the beef mixture. Lay half the pepperoni slices on top of the ricotta mixture. Put remaining shredded mozzarella over the pepperoni slices, and lay the remaining pepperoni on top of the cheese.

7. Bake until bubbly (about 20 minutes).

  • My husband and I are low carbing it together and thoroughly enjoyed this recipe with a few changes: 1 percent cottage cheese with low fat ricotta, part skim mozzarella, and eggbeaters. Also, didn't have mushrooms or peppers--still excellent! - 1/20/13
