Curried Lentil Soup

Ingredients

    1 tbsp extra virgin olive oil
    1 large onion, chopped
    1 large carrot, chopped
    3 tsp curry powder
    1 tsp garam masala
    dash of salt
    1 tbsp pepper, or to taste
    1 can (14.5 oz) diced tomatoes, drained
    2 cups lentils
    4 cups broth (veggie or chicken)
    2 cups water
    1 (about 3/4 lbs) bunch kale, chopped or ripped into smaller pieces

Directions

Heat oil in a large stock pot and add onion, carrot, and garlic. Sweat on low heat for a few mins, then add curry powder and garam masala. Cook for another 3-5 mins.

Add tomatoes, lentils, stock, water, salt, and pepper. Bring to a boils, then lower heat and simmer for at least 45 mins.
NOTE: if your soup is getting too thick, add another cup of water. continue until it is the consitency you desire.

Add kale and cook until it's wilted.

Serve as-is or top with greek yogurt.
