Greek Salad

Introduction

A great salad that keeps well in fridge for a few days. A great salad that keeps well in fridge for a few days.
Number of Servings: 8

Ingredients

    6 pitted black olives
    8 inch english cucumber with peel
    1 yellow bell pepper
    1 cup cherry tomatoes
    .50 cup feta cheese [crumbled or diced]
    1 clove of garlic, minced
    1 tblsp. balsamic vinegar
    3 tblsp. extra virgin olive oil

Directions

Slice black olives, thinly
Mince garlic clove
Slice cherry tomatoes in half
Remove seeds & pulp from bell pepper, chop pepper
Dice or chop cucumber
Add feta cheese
Add balsamic vinegar and olive, toss all to coat and set in fridge.

Serving Size: makes 8 1- cup servings
