Guacamole - Under 75 calories

Introduction

Some of my favorite guacs are around 250 calories a serving. I decided to make a fresh batch to compliment low calorie quesidillas for dinner. Some of my favorite guacs are around 250 calories a serving. I decided to make a fresh batch to compliment low calorie quesidillas for dinner.
Number of Servings: 4

Ingredients

    *Avacado, whole - remove seed & skin.
    * Garlic, 2 tsp or 1 clove
    * 1/4 of Medium onion
    * 1/4 Bell Pepper Red
    * 1/4 Jalapeno Pepper
    * Lime Juice - just a dash, 1/8 tsp

Directions

Slice Avacado in half with knife. Pull from seed. Use spoon to scoop out insides. Discard skin and seed.

Add garlic and mash with fork.

Finely cut 1/4 of a medium onion, 1/4 of a bell pepper, 1/4 of a jalapeno. (see quesidilla recipe for use of the rest of the peppers).

Stir into guac.

Add a dash of lime juice before serving.

Serving Size: 4 Servings (great for spread)
