Penne Jumble

Introduction

Penne noodles
3 whole tomatoes (optional)
1 jar stewed tomatoes (whole tomatoes ok)
meatballs (I make homemade)
Mozzarella Cheese cut in small chunks

meatballs (I make homemade)
Mozzarella Cheese cut in small chunks

Number of Servings: 6

Ingredients

    4 c. uncooked penne noodles
    20 - 24 meatballs depending on size
    3 whole tomatoes
    1 lg jar stewed tomatoes (whole tomatoes is ok)
    lg wedge or approx 10 oz mozzarella cheese cut into chunks
    salt & pepper to taste
    garlic chopped small (optional)
    1 onion chopped (optional)

Directions

Boil noodles till tender, drain & put in pan for oven. Add small meatballs (I use homemade), cut up mozzarella chunks and stewed tomatoes. Add your salt, pepper, garlic (onions are also good in this) or whatever seasoning you like to the dish as well. Make sure that everything is mixed so the cheese and meatballs are spread out evenly.
Bake in a 350 degree oven for 30 to 45 minutes.

  • Made this last night and the boys really loved it! I used frozen meatballs and omitted the fresh tomatoes. I used one can of Italian style diced tomatoes and one with diced green chilies for a little kick. Love it! - 9/13/11

    I'm so glad you and the boys loved it. I use this recipe and change it around or add things all the time. Sometimes I have used sausage in place as well. My husband likes it with hot peppers but I didn't put it in.
