Homemade Macaroni & Cheese

Introduction

Once you have homemade macaroni and cheese, you will not go back to the box! This is pure comfort food. Worth indulging in once in a while. Once you have homemade macaroni and cheese, you will not go back to the box! This is pure comfort food. Worth indulging in once in a while.
Number of Servings: 8

Ingredients

    4 TBS unsalted butter
    3 TBS flour
    4 cups milk
    3 cups american cheese, diced
    1 cup swiss cheese, diced
    1 lb (16 oz box) elbow macaroni cooked

Directions

Melt butter in saucepan and stir in flour to make a roux. Pour in milk. Blend well, whisking away any lumps. Stirring often, bring to a boil over med high heat. Add cheese. Stir well to melt. Add cooked macaroni. Mix well and pour into greased 3 quart casserole dish or 9x13 pan. Bake at 350 for 25-30 minutes or until bubbly. If desired, you may top with toasted bread crumbs before baking, but I did not include bread crumbs in the nutrition count..
