Ingredients

    3 Cornish Hens
    Coarse salt
    Coarse Pepper
    1/2 cup frozen OJ Concentrate defrosted
    1/2 cup balsamic vinegar
    2 tbls olive oil
    4 stems rosemarry chopped up

Directions

Preheat oven to 425

Line a baking pan with foil for easy cleanup. Set a baking rack in pan. Split hens up the center and butterfly open, tucking in the wings. Season the hens with salt and pepper liberally. Mix the OJ concentrate, balsamic vinegar and olive oil and pour evenly over the hens, or brush on hens. Sprinkle with rosemary and roast 15 minutes at 425 the turn down oven and roast for another 30 min at 375 degrees F.
