Turkey bacon Spanish Rice

Introduction

I used to make this with pork. Using turkey cuts back a lot of the calories. This recipe was fixed with left over rice. One can adjust all ingredients to their taste. I used to make this with pork. Number of Servings: 37

Ingredients

    1 small onion
    1 can diced tomato
    14 slices of bacon
    1 3/4 cup cooked rice

Directions

Cook bacon in microwave until about done. Chop onion and cook until almost tender. Dice bacon and add to onion. Add tomato and rice. Heat until hot. Add water as needed so it isn't too dry. My finished dish weighed 37 oz. That is how I figure what 1 oz equalled.

Serving Size: 1 oz equals about 23 calories
