Introduction

This is a yummy meatless filling for empanadas that I tried to make based on some we had at a friend's house. Mine didn't turn out quite like theirs, but my family still enjoyed it. This is a yummy meatless filling for empanadas that I tried to make based on some we had at a friend's house. Mine didn't turn out quite like theirs, but my family still enjoyed it.
Number of Servings: 20

Ingredients

    4 cups chickpeas
    2 small onions
    1 jar green olives
    any spices desired (I used red pepper, garlic powder, paprika and black pepper)

Directions

Chop up chick peas, onions and olives very fine (we used our food processor). Mix in spices. Cook in pan on low heat, adding water as needed until it reaches a smooth consistency that does not crumble. You can use this to fill emanadas or as a dip for tortillas.

Serving Size: Makes about 20 servings (2-3 T each)
