Cheddar Broccoli Soup

Introduction

This soup is loaded with fresh veggy taste. Unlike many cream of broccoli-type recipes this one relies more on the veggies and not on cream. This soup is loaded with fresh veggy taste. Unlike many cream of broccoli-type recipes this one relies more on the veggies and not on cream.
Number of Servings: 8

Ingredients

    2 tbsp butter
    1 onion, chopped
    2 tbsp flour
    1.5 lbs broccoli chopped fine or run through a food processor
    1 c grated carrot
    1 can vegetable or chicken broth
    1 cup milk
    12 oz cheddar cheese

Directions

1. saute chopped onion in butter for about 5 minutes until soft
2. Add flour, sauteing for another 2 minutes.
3. Add broth, broccoli, carrot and enough water to be just cover the veggies. Simmer about 15 minutes, until broccoli is cooked.
4. Add 1 cup milk and 12 oz of cheddar cheese, stirring until cheese is melted.
5. Puree soup until smooth.

Notes: You can substitute the fresh broccoli for frozen, but it has slightly better taste and nutrients if you use fresh.

A food processor makes this soup super fast and easy. Use it to both chop up the broccoli and carrot, for a fresh, quick cooking soup.
