4 cups grated Zucchini
1/3 cup veg oil
1/2 cup Parmesan cheese
1 small onion, diced
1 cup biscuit mix (Bisquick)
1 clove garlic minced
1/2 tsp marjoram or oregano, dried
1/4 tsp paprika
1/4 tsp pepper
1/2 tsp salt
1/4 cup fresh parsley, chopped
Grate zucchini and set aside.
Place all ingredients in a bowl EXCEPT for the zucchini, parsley and paprika. Mix well. Fold in the zucchini.
Pour into a 10" deep pie plate which you have sprayed with no-stick oil like Pam. Top with parsley and paprika.
Bake at 350 degrees for 40-60 minutes until centre is set. Cut into pie wedges to serve
