Ingredients

5 large eggs
1 pint sliced mushrooms
1/2 cup kroger shredded Mexican cheese blend
1/2 Tbls Nasoya Super Hummus Spinach and Garlic flavor
Non-Stick Spray (i used butter flavor)
Directions
Preheat oven to 350.
I sauteed the mushrooms usng non-stick spray, then i chopped them up semi-fine in the food proccessor. add the other ingredients. use food processor to mix everything together well. spoon mixture into lightly greased (non-stick sprayed) mini-muffin pans. bake for 15-30 minutes or until the center is firm. they should pop right out after cooling a bit. enjoy! makes 24.
Serving Size: 24 mini muffin sized bites
NOTE:this is NOT a perfected recipe, it may take more or less time to cook, depending on your pan/oven. make sure to let the mixture settle before baking or you will have hollow quiches. play around with it, that's what i did!
