Introduction

i grilled the vegetables and used the left overs for this fritata. i grilled the vegetables and used the left overs for this fritata.

Ingredients

    Preheat oven to 375.
    Dice up vegetables and satue' in non stick skillet (SautÚ Pan), beat egg whites and whole egg until fluffy. take pan away from heat stir in 1/4 of the eggs and put back on burner, add cheese then rest of eggs.heat on med for a minute carefull not to burn take off stove and place in the oven for 20 minutes take a spatula around they edges and gently shake in pan to loosen away from bottom slide onto lage plate.
    slice and eat with salsa or not
    great at room temp too.
