Barley, Black Bean, and Corn Burrito Filling

Number of Servings: 9


    1 (14.5 oz) can Black Beans, rinsed and drained
    1 (14.5 oz) can diced tomatoes
    1 (4 oz) can diced green chiles
    1 cup uncooked pearl barley
    2 cups vegetable broth
    3/4 cup frozen corn
    1/4 cup chopped green onions
    1 Tbs lime juice
    1 tsp ground cumin
    1 tsp chili powder
    1/2 tsp cayenne
    1 tsp minced garlic
    1/4 cup chopped fresh cilantro


1. Place all ingredients except cilantro in a 3 to 4 quart slow cooker, stir well. Cover and cook on low 4 to 5 hours or until barley is tender.

2. Stir in cilantro and use to fill burritos, tacos, or eat on it's own.

Makes 9 servings 2/3 cup each
