Angel Protein Cake

Introduction

This is a great after workout treat that you, not only, don't have to feel guilty about. but will also help feel your muscles! It's easy to make and easy to eat! Number of Servings: 6

Ingredients

    16 oz. liquid egg whites
    1 oz splenda
    1/2 tsp cream of tarter
    1/4 tsp salt
    6 oz flavored protein powder

Directions

Set oven to 375 degrees F.
1. With a wire whip attachment on your stand mixer (you can do this with a hand mixer as well), Start whipping the egg whites on high speed. While the mixer is going, add the cream of tarter and keep mixing. Once you can't see the yellow in the egg whites anymore, gradually add the splenda in with the mixer running (you might need to turn your mixer down a little to do this so it doesn't just blow the splenda back out of the mixer). Continue whipping until the whites form soft to medium peaks (should look white and glossy. Similar to marshmallow fluff).
2. Transfer the whites into a large mixing bowl. Slowly sift and fold in the protein powder and salt, being careful not to deflate your egg whites. You're done folding when you can't see dry powder anymore.
3. Pour into lined cupcake pans. Bake at 375 degrees F for 10-20 minutes, or until an inserted wooden skewer comes out clean.
