Zucchini Microwave Muffins

Introduction

These muffins are quite moist, sweet and delicious.
My muffin cups are quite large. If you could make 12 muffins out of this batter (smaller cups), it would be about 125 calories/muffin.

Number of Servings: 10

Ingredients

    1 egg
    1/2 c. packed brown sugar
    1/3 c cooking oil
    1/2 tsp. vanilla
    3/4 c. unsifted all purpose flour
    1 tsp. ground cinnamon
    1/4 tsp. salt
    1/8 tsp. baking powder
    2/3 c. shredded zucchini


Directions

Beat egg; blend in brown sugar, oil and vanilla until smooth. Add remaining ingredients; stir until moistened. Spoon batter into paper-lined microwave muffin cups filling cups two-thirds full.
Microwave (high) 6 muffins at a time, uncovered, 2-2 1/2 minutes or until no longer looking doughty on top. Rotate once if you don't have a rotating plate in your overn. Repeat with remaining batter, microwaving 3 muffins 1 1/2-2 minutes.

Carrots, walnuts, almonds or raisins could be added but remember to add the calories /nutritional info when finished.
