Ingredients

    1 13.25 oz box Mueller's Whole Wheat Penne Pasta
    1 pint very fresh Cherry or Grape Tomatoes
    Half a Cup roasted unsalted Pumpkin seeds
    15 leaves fresh Basil
    2 cloves Garlic
    Pinch Kosher Salt (to taste
    Black Pepper to taste
    1/2 cup Parmigiano Regiano
    2 TBS EVOO (remove)

Directions

Bring pasta water to a boil

Add pasta to water and cook following package directions

Put the next 7 ingredients in a food processor, reserving only the olive oil.

Pulse the mixture 8-10 times until you get a course texture. With the blade running, stream in the olive oil quickly. Taste and adjust seasonings.

Drain pasta. Add sauce to serving bowl. Add pasta all at once and toss. Serve immediately.

Serving Size: Makes 6 1-cup servings
