12 Cups finely chopped zucchini
4 Cups chopped onions
2 large sweet red peppers
1 large green pepper
1/3 Cup Pickling salt
2 1/2 Cup Granulated sugar
1 tbsn tumeric
1 tsp curry powder
2 1/2 Cup White vinegar
1 jalapeno pepper chopped
Drain and rince vegetables. Prep 6 jars for preserve. Place vegetables in a large stainless steel saucepan. Stir in the rest of ingredients. Bring to a boil. Reduce heat and boil gently for about 45 min. Yield about 6 jars. Serving is calculated on 2 tbsn.
