1 box penne pasta, uncooked
2 tbsp olive oil
1 onion, chopped
6 cloves garlic, minced
3 cup salt free chicken or vegetable bouillon
15 button mushrooms, sliced
6 cups fresh spinach, washed and dried
salt and pepper to taste
2. Dissolve powered or cubed bouillon into 1 cup boiling water and add to the pasta. Stir contents, cover, and let simmer for 5 minutes.
3. Add the sliced mushrooms to the pot, along with salt and pepper. Stir and cover. Continue simmering until pasta is almost al dente (about 7-10 minutes).
4. Add the spinach and stir until the leaves are barely wilted.
