Tomato Soup

Ingredients

    Ingredients:


    Olive Oil, 2 tbsp
    2 cans whole tomatoes no salt added
    Millet, .25 cup
    Onions, raw, .5 cup, chopped
    Garlic, 3 cloves
    Water 1.5 cup
    Oregano 1 tbsp
    Basil, 2 tbsp
    Crushed red pepper flakes 1 tsp


Directions

In a medium size pot, over medium heat, saute onions and garlic in olive oil until soft. Add tomatoes. I usually use whole tomatoes and cut them up in the can with scissors before adding to the pot. Add remaining ingredients except the millet and let simmer for 20-25 minutes. Add millet and continue to simmer for 15 minutes. If you like your soup smooth (which I do most of the time) turn off heat and put half the mixture in a blender and blend until smooth (It will turn a lighter red color). Do the same with the remaining mixture. If you like it chunky, don't blend it or only do half. You can also add light cream (1/2 cup)or parmesan cheese (1/4 cup grated) to this if you really want to make it rich. Calculations are without either of those items.
