Yogurt Cucumber Salad

Introduction

This is my version of a traditional Persian salad "Musso Khyeir", which my dear husband had been trying to teach me to say properly for the last 26 years. This salad is great in the summer for cookouts, it is very refreshing and cooling. Also chocked full of those fruits and veggies we need. Number of Servings: 16

Ingredients

    4 cups plain low fat yogurt
    2 cups diced drained cucumber
    1/2 cup golden raisins
    1/2 cup finely chopped walnuts
    1 apple (large) cored and diced
    1 c seedless grapes (halved)
    2-3 T dried mint

Directions

1-Place the yogurt in a large salad bowl (10 c), place 1/2 the mint in the palm of your hand and rub with the other over the yogurt. This will produce a very finely growned mint, finish adding the rest of the mint.
2-Add the rest of the ingredients and mix well.
3-Chill in refrigerator at least 2 hours before serving, can be made ahead of time and held until serving.

I like my raisins to soften in the yogurt, but if you like them chewy, don't add them until after chilling.

You can also add a bit of celery if you like.

This makes approximatelly 7-8 cups of salad, the calculations are based on 16 1/2 Cup servings. We like it so much, we generally eat more than 1/2 a cup. Made as directed it contains 12 carbs per serving, you can reduce that by leaving out the raisins.

  • This sounds really good, raisins and all. they are good carbs after all, and if you take them out you will also lose some fiber too. I have everything but the apple. Would you recommend sweet or tart apples? - 8/18/10
