Easy roast beef egg bake

Introduction

This is something that I just put together. It's quick and has a nice protein portion to get the morning started. This is something that I just put together. It's quick and has a nice protein portion to get the morning started.
Number of Servings: 9

Ingredients

    9 Large eggs
    1 cup almond milk unsweetened (or you can you use whatever milk you prefere)
    1 whole medium tomatoe chopped
    1/2 cup of baby spinich chopped
    1/4 cup of feta cheese crumbled
    8 slices of roast beef deli sandwich meat
    Salt and pepper to taste
    Pam olive oil pray

Directions

Preheat oven to 375 degrees

Spray 8X8 casserole dish with Pam olive oil spray.

Wisk together the eggs and the milk to scramble thems. Mix in the remaining ingredients and salt and pepper to taste.

Pour into the greased 8X8 casserole dish and bake for 30-45 minutes at 375* F. The center should be firm but don't over cook this dish or you will have dry eggs.

Cut into 9 pieces.

Serving Size: makes 9 2X2 inch pieces
