Lazy Daisy Cake (no topping)

This cake is excellent on its own, or without the topping, it makes a good shortcake to go under strawberries and cream or to pour over fruit filling to make cobbler.

This cake is excellent on its own, or without the topping, it makes a good shortcake to go under strawberries and cream or to pour over fruit filling to make cobbler.

Number of Servings: 8

Ingredients

    1/2 cup scalded milk
    1/4 cup canola oil
    2 large fresh eggs
    1 cup granulated sugar
    1 1/3 cup brown rice flour
    1 tsp xantha gum
    1 1/2 tsp baking powder

    Optional Topping:
    5 Tbsp butter
    1/2 cup sugar
    2 Tbsp milk
    Sprinkle with coconut.

Directions

Scald milk and let cool slightly, add oil. Beat eggs and sugar. Sift together flour, baking powder, and xanthan gum. Add dry ingredients alternately with warm milk. Put in a greased 9x13 pan and bake for 30 mins. If using topping, melt the butter and mix with milk and sugar. Pour over the cake as soon as it comes out of the oven, and sprinkle with about 1/2 cup coconut. Broil in oven until coconut starts to brown.
