Vegetarian Skillet Chili

Ingredients

Olive Oil
1-2 cloves garlic, minced
1/4 cup chopped onions
1/4 cup red bell pepper
1/2 cup zucchini
1 can diced tomatoes, low sodium
2 cups black beans, rinsed & drained
Chipotle in Adobo to taste, chopped
Paprika
Fresh ground black pepper
Chopped cilantro for garnish
Chopped avocado with a squirt of lime is great with it too
Directions
Add oil to heated pan, then add onions, bell pepper, zucchini,& garlic or whatever veggies you're using on low - med heat. Cook for about 5 min. or until desired tenderness. Add tomatoes, beans, & chipotle pepper with a little bit of the adobo sauce. Careful, it adds quite a bit of heat. Season to taste. Simmer for about 10 minutes or until most of the liquid is absorbed. Top with the cilantro & avocado, and serve with brown rice, quinoa, or stuff it in a wrap.
