1-2 cloves garlic, minced
1/4 cup chopped onions
1/4 cup red bell pepper
1/2 cup zucchini
1 can diced tomatoes, low sodium
2 cups black beans, rinsed & drained
Chipotle in Adobo to taste, chopped
Fresh ground black pepper
Chopped cilantro for garnish
Chopped avocado with a squirt of lime is great with it too
Please note that the cooking times & measurements are estimates.
